Protein Mug Cake
I have a sweet tooth….a big one!
One of my biggest downfalls is thinking I need something sweet after dinner each night. And although I don’t believe in restricting myself from foods I really want, I do like to find ways to make them healthier.
I originally found a very similar recipe from Kale Kouture, I’ll link it here. Her recipe is made using pumpkin, which I really like, but around here that can be hard to find outside of Fall. So I went to work to find an alternative.
What you need:
Any cake mix
Unflavored collagen (I like Perfect Supplements brand best, you can use code AUBREYFAM at checkout for a discount)
Unsweetened apple sauce
Water
Any type of baking chip
How to make it:
Combine 1/2 cup cake mix, 1 scoop unflavored collagen, 1 tablespoon of apple sauce, & 1-2 tablespoons of water in a mug of your choice.
Cook in microwave for 1 minute 20 seconds
Allow to cool in microwave approximately 1 minute….if your cake isn’t done microwave for 20 more seconds
Top with baking chips of choice & allow to get melty
Notes:
Spray inside of mug with olive oil to prevent sticking
Add water 1 tbsp at a time to get cake batter consistency, I typically only need 1 tbsp
For more of a brownie type texture, use more mater. For cake type texture, use less water.
Flavor combinations I’ve tried:
Chocolate cake mix, chocolate chips
Chocolate cake mix, peanut butter chips
Chocolate cake mix, chocolate collagen (use code AUBREYFAM for discount), chocolate chips
Strawberry cake mix, white chocolate chips
Yellow cake mix, chocolate & caramel bits with peanuts
Lemon cake mix, white chocolate chips
Let me know what flavor combination you’re dying to try! I’m hoping to do funfetti and carrot cake in the future!
